To celebrate our return to this year's London Coffee Festival we are excited to release this limited edition lot single variety selection of Pink Bourbon produced by Jorge Rojas at his farm La Roca State in Las Planadas area of Tolima department in Central Colombia.
Jorge started helping his mother at the farm when he was only 12 years old following a loss in their family. Now, 20 years later on he is a well established and experienced producer who isn’t afraid to be experimenting and pushing the boundaries of coffee production. His attention to detail makes it possible to cultivate and produce stunning unique coffees like this exceptionally juicy lot.
With this Pink Bourbon lot, as with all all of his coffee, Jorge has paid meticulous attention to the post harvest processing in order to maximise the variety’s full potential.
After the cherries were selectively picked and sorted, the coffee undergoes in cherry fermentation first before being de-pulped, fermented again and finally slowly dried in two stages.
Here is the low-down of step by step processing of this coffee:
1) Fermentation in cherry in covered barrels for 36 hours
2) Pulping of the coffee
3) Fermentation with a pH of 6.2. The fermentation finished with pH 4.8
4) First drying phase: sundried on raised beds at 26 degrees
5) Second drying phase: in parabolic dryers for 28 days (highest temperature: 34 degrees)
And what is the Pink Bourbon variety and why is it special?
The variety gets its name from the colour of the ripe cherries which are orangey-pink in colour. This is believed to be due to a natural mutation or hybridisation of the Red and Yellow ripening trees of the same Bourbon variety. Though we don't know the exact genetic parentage of the Pink Bourbon variety, we know for sure that the cup profile it carries is very distinctive and exceedingly delicious. Pink Bourbons are often quite delicate in body but very sweet, fruity and floral with exceptionally complex acidity. And this one from Jorge is a shining example of it!
